I absolutely love refried beans. It is hard to comprehend how a food that looks so disgusting, could taste so damn good!

I used to always buy my refried beans pre-made in a tin but in an effort to be more health conscious, I thought why not skip all the preservatives and extra salt. I had an idea of what spices I would want to use and got the idea from a friend to use black beans instead of the illusive pinto that I would have normally thought to use.

For this recipe you could mash the beans with a fork but it takes a long ass time, so just save yourself and throw it all in the blender.

Ingredients:

  • 1 tin black beans in water
  • 2-3 cloves of garlic
  • 1 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • salt to taste
  • optional oil to fry the beans in – I usually leave it out

Instructions:

  1. Drain about half the liquid out of the black beans and put the rest into your blender. Add garlic and spices.
  2. Blend until smooth.
  3. Taste! Very important to taste your beans at this point and make sure they are flavourful. I almost always add more garlic and salt at this point.
  4. Fry your beans over medium heat for about 8 minutes. If I’m honest, adding oil at this stage does make them taste better but I really enjoy them oil free as well if you are into health stuff.

I often double the recipe when I’m making dinner for anyone else – yup, I can eat a tin of black beans on my own!

3 ways to eat refried beans

  1. As a chip dip – Get some corn chips and dig in! Better yet make some guac and fresh salsa and have a dipping trifecta!
  2. Burritos! – Everyone loves a good burrito, it’s just a fact. I like to sauté some peppers, onions, garlic, and mushrooms with a blend of spices (chili powder, paprika, cumin) and load a wrap up with the veg and refried beans. Always a good idea to finish it with some guacamole and coyo!
  3. Salad bowl – Since it’s been so warm out recently, I’ve been enjoying having salads for dinner and adding refried beans makes it more of a substantial meal. I made a simple green salad with romaine lettuce, spinach, sweet corn and some cherry tomatoes and dressed it with a follow your heart ranch dressing then popped the pile of beans on top. I also crumbled some corn chips on top for a bit of salty crunch.

What I’m saying here, is that refried beans make everything better. Try them, you’ll see.
