This is my go to Autumn/Winter soup when I feel like I might be picking up a bug or just in need of some general nutrition.

I really love having this soup for weekday lunches as it’s warm, filling and satisfying. There is absolutely nothing but healthy whole food ingredients so it makes me feel great after eating. Enjoy.


  • 1 onion
  • 3 cloves garlic
  • 3 carrots
  • 1 can chopped tomatoes
  • 1 cup red lentils
  • 4 cups vegetable stock
  • 1 tsp chili powder (or less depending on how spicy you like it)
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 2 cups chopped kale


  1. Chop onions, garlic and carrots and cook together with a bit of water in the pot for about 5 minutes.
  2. Add chopped tomatoes, lentils, vegetable stock and spices.
  3. Bring to a boil then turn the heat down and simmer for about 20 minutes. (The cooking time may vary depending on what type of lentils you use as red often cook faster then brown in my experience, just give it a taste before you take it off the heat.)
  4. Add washed, chopped kale and cook for another 5 minutes. lentil.jpg
